Can I only download the campaign mode without any DLCs? This thing is a whopping 60GB but I've heard people ended up with 110GB after downloading...

No, sorry.
Once you start downloading, you´ll get the whole game.
The mappacks are included in the monthly updates.
But you could buy BF1 on a disc and play the campaign offline (on consoles, I don´t know if that would work on PC).
