You CAN actually update your weapon specialisations in-game. Instead of selecting the weapon and trying to customise - you must hit the customise button (square on PS4) and go in that way. It's so stupid and likely a design oversight but it IS possible.
Give it a try and hit me with some XP if you can get it to work.

Ok tried it but nope. It’s unlocked but can’t select. Now I “have” to stop this session and close the game. And start the game again and then it will allow me to add the specialization. ☹️
Oh okay sorry. This sounds like a DIFFERENT bug/issue than what I thought it was.
