Oh, ok @orexg1 I got it. You need to force G-Sync to not be loaded by applications which bypass Nvidia configuration. Well, there is this tool, Nvidia inspector tool, which you can use for that purpose.

Run it and on the 2nd group, entitled Sync and Refresh you need to force disable all G-Sync entries, including the options where applications can request G-Sync activation. Don't forget to press apply changes in the top right. I believe this will get you what you want.

I forgot to mention that to edit the configuration you need to press a button in front of the driver version section, and then you'll have the list where you have G-Sync tweaking on the second section.
