Have you checked the installation folder of Battlefield V? Are there any files located there? Can you take a picture of the mentioned folder?

Here you go:
It's quite odd that you can't uninstall an installed game. Perhaps it's related to user permissions. Have you attempted launching the EA App as an Administrator to see if that resolves the issue? You can do this by right-clicking on the EA app icon and selecting "Run as Administrator" from the menu that appears.
You could also try installing "Revo Uninstaller" the free version for trying to remove the game. I use it often when having issues with "phantom" programs.

Honestly, I'm running out of ideas, that always does the job for me. I looked trough some Microsoft forum post on the issue.

Is it a good or a bad idea to delete the files like this?
Yes, you can try doing it like that but I'm not sure if everything will be deleted. This could also result in having issues when trying to install the game once again sometime in the future on the same hard drive.
