Is there a way to add jersey text in Teambuilder?
Feels like there should be an obvious place for it but I can't find it anywhere. Is it even an option?

Yes, you can. You'd have to upload the text as an .png image then choose the option to add the image to the jersey in team builder. I've put both text and images on the sleeves and crest of the jersey.
