Have you done the second part of the sequence? Once you leads him into the clearing and hit him with the harpoons, you need to immediately run to the opposite side to a generator looking device against the wall. Use kinesis on the wheel and repeatedly do this. If you get interrupted too many times or do not consistently do it fast enough, the boss will break free and move to attack you again.
This sequence is much easier in coop as you can harpoon the boss and the second player can immediately start turning the wheel. The second player then defends the other while the wheel is being turned; limiting interruptions.
This will defeat the boss in a somewhat gory and pleasant fashion.
