dragon age 2 how do i delete out characters to start new one

Well, to build a brand-new character you can simply select "New Game" from the Main Menu when you first start the game.  

(No need to destroy your previous ones.)

But to wipe out an existing Hawke completely, simply delete the folder with that character's name from your "\Bioware\Dragon Age 2\Characters" folder.
