Windowed vs. Full Screen

I'm having the same problem. Playing is fullscreen at the start was simply nauseating, and I have the same screen as you do when looking at my game options. I also tried following the directions given here but there was nothing good to show for it, as well as placing -windowed in the game properties option from the My Games page.
EDIT: I looked into the files and found C:\ ... \Origin Games\Dragon Age\bin_ship. Under that, I found the DAOriginsConfig, which lets you change thiings there. There actually WAS a box to turn on/off fullscreen in the menu there (still not in game).

Strike that, it turns out that button is mapped to put a screenshot in a Bioware folder automatically, so here is what my video options look like:
