I'd recommend holding your finger on the Xbox power button on the console until the light goes out. Then try starting again.

It sounds like the system is just doing a soft reset, so it's not really restarting the game. https://vlc.onl/

@porosian Hey following up on this one. You make good points, and thankfully I can test it out on more than one system as well. If it happens on one and not the other, typically that's corrupted data which can save on the console still rather than the game. If it was the game specifically, it would happen on more than one.
