I purchased two $20 EA/Origin Gift Cards with the purpose of buying APEX Coins on PS5. It seems that this is not possible since PS5 controls the content within its platform. I'm trying to understand ...

Funds in your EA wallet can be used to purchase games or an EA Play membership in the EA app on PC. These funds are specific to PC, and wouldn't work on either Xbox or PlayStation as in-game purchases for Xbox and PlayStation go directly through the Xbox or PlayStation store on your console.
If you're wanting to use a gift card to purchase in-game content on your console, you can look into purchasing a PlayStation gift card to add those funds to your PlayStation wallet.

Is it possible to receive a refund for the two $20 Origin gift cards? The purpose of purchasing them was to buy Apex coins for my son on PlayStation 5. However, I am not a gamer and wasn’t sure what to buy, the employee at GameStop said it was the correct card.
Otherwise, the funds on his Origins account will never be used since he does not have a PC for games.

Did you buy these cards from GameStop? For a refund, you'd want to reach out to the retailer they were purchased from to check if they're able to process the refund for you- however if the codes on the card have already been redeemed, they most likely are not eligible to be refunded.
