I understand the reason for certain disallowed words, but I can't use: YT, YouTube, You Tube, Tubes of You, or even ONLINE. I stopped added the link to my channel, but why can't I just say "Find me on YT [channel name]??? This doesn't make sense to me. Does EA NOT want us to do this? It's not like EA would be losing traction or anything. I don't get it. Can someone please explain why???

Certain words can be blocked for use due to people abusing them or using them in an inappropriate manner. But without knowing more context around your issue, it is hard to really give any concrete info.

There can be restrictions in place to stop people abusing the system and as we have no control over third-party sites the team may need to put restrictions in place on links in creations.
