So I've been thinking about this and I think the issue and reason the feedback is so varied is that the people saying "the car is too grippy/the game is too easy" are probably playing time trial/online races with equal performance, and the people saying the driving is worse are playing career modes, because the career mode car has always driven worse than the time trial car (until its upgraded to a certain point). in f1 23, the time trial car handled like a dream but the myteam car had horrendous traction out of corners. in f1 24, The career mode handling experience is significantly worse since the patch for me

@dad_brah I'm exclusively playing career mode. I made a comment earlier in this thread and said that there seems to be an excess of grip and riding kerbs does not punish you at all. But your point is valid. Career mode car always feels worse at the beginning. It seems that people are experiencing a remarkable mix of issues regardless of the mode they're playing. It'd be interesting to hear what EA/Codemasters think about this. But I doubt there will be any sort of dialogue here.
