No LAN option for Xbox

It's not as if the platform itself (Xbox) is not capable of LAN, so why would it not be an option? I know people on both PC and PS say they can play via LAN, so it should be possible on Xbox as well.

I want to connect multiple Xbox consoles through the same network and host a racing weekend. I shouldn't have to rely on a (multiple, actually) subscription(s) nor use the actual internet, if all those devices will be together to begin with.
