To anyone having this issue.
Uninstall the game (just the game - be very careful here) and reinstall. Progress is saved (on mine at least)!
This will allow you to go through the Gamma settings again. I left mine at 100 (default).
I am now able to see the track correctly even though the Gamma settings is still locked (until they fix it). At least now I can play the game!!!!

To change the gamma setting, simply turn off HDR. No need to uninstall the game.
That said it shouldn't be necessary. I'm unclear why EA is applying (hidden) gamma modifications in HDR

Having the same issue on PS5. One min the game looks ok but then it’s really washed out. Seems to be worse in wet weather than dry.

Turned off HDR. That didn't fix the problem.

Not just HDR, turn off everything in that menu.
