Even though I wish F1 25 would support PSVR2, I don't think EA will do it, because unfortunately PC is the main environment for racing sim.
PlayStation has Largest share off F1 games sales in recent years. PlayStation has something around half the share. Then Xbox. PC os no more than 20%. But you are right when it comes to more hardcore sim titles. However a lot of those titles are looking to release on console in the not to distant future. when those release on console if they also have PSVR2 support. You'll see many racing games adding it.
Companies like EA don't start trends. They wait and follow the next trend they believe will make profits
