The offline modes aim to simulate more than emulate.  Ultimate Team however is more emulation in it's direction.

It would be amazing to see female players irl represent their club or nation in the same team alongside their male colleagues equally, I think that decision is up to the professional players themselves. 

We have seen it happen in real life friendly matches but there isn't anything to simulate yet on a professional career level.
