Have you also tried to delete the existing settings profile, in case any of the files got corrupted? Those could stay on PC even if you uninstalled the game.

Try making a copy and deleting the existing settings folder from this location C:\Users\[Username]\AppData\Local\EA SPORTS FC 25 (App Data is usually a hidden folder so it can be changed from the View dropdown.) You may also need to delete the Personal Settings 1 profile when you launch the game.
