I have not been able to play Madden 27 H2H mode due to a bug that says Desync every time I start the match. I can access every other mode except that one, doesn't make sense. I'm on PS5 Pro if that matters.

Hello! Hijacking this to put more desync errors on your radar. I run a Coach Mode only CFM league. Almost every game has a desync error by halftime. We're really struggling with it. It seems to stem from coach adjustments/audibles but we haven't quite been able to replicate it consistently. We're at Week 8 and this happens nearly every game. We're at the point where other users will start with a "gentlemen's agreements" to make no adjustments. That seems to be the only way to avoid it.
