Max age = 40?

It's odd to me that you can't edit the age of players to over 40 i.e. Tom Brady but the max age is 40. 

Jason Peters is 40 and will be 41 by season's end, Vinatieri was 44 etc.

Can this be easily adjusted? Why have a limit?
