There is not really a blond option in the Character Creator, all hair in the MELE is more or less gray inside the first options that resemble Blond the most.
The transparency of Sheps hair, if you use the gray options, is another problem, the hair tend to change colour under certain lightning conditions.

You can set a blond colour in the "Trilogy Save Editor". You can find a link in this post.

  • Make a backup of your save game folder.
  • Open a save game in the Trilogy Save Editor.
  • Go to the "Head Morph" tab.
  • Expand "Vector parameters"
  • Expand "HED_Hair_Colour_Vector"
  • Underneath "HED_Hair_Colour_Vector" you see three parameters. R, G and B
  • That are the RGB colour numbers that control the hair colour. 
    This RGB tool let you see how a number changes the colour.
  • Change the numbers to a colour you like.
  • Save the changed save game.
  • Test.

This will give you a better colour in many places, but the transparency problem is still there, so it is not perfect.
For that you might check out the different hair mods on the Nexus, but I don't know if they actually address this problem, did not used any of them.

You also could try to import a head morph from the original trilogy, I heard this give better results.

    Thanks for trying to help! I used the first color option in the character creator and checking the color vector in the Trilogy Save Editior, it already shows me a yellow ("Blond") color (Hex code results to #FFDE85). So it should already be blond. I also compared this with the RGB code I had in the original trilogy (where I never had problems with the color), and it's exactly the same. 🤔

    I've noticed that if you use the pale yellow or red colors for hair, the hair looks grey.  you need to have more of the color, at least the mid-range values, to see the color.  Playing with shine, saturation, other scalars can help.
