There is no way to get more Lamborghini Huracan blueprints right now.
The Lamborghini Accademia special event was the only way to get those blueprints.

@Meterora Lamborghini Huracan blueprints can now be won in selected replayable races whenever a limited-time offer of it appears in game.
As for Lamborghini Accademia special event, it might make a comeback in December for Christmas.
