I have exactly the same problem and I still have not found a solution.

I use a G25 which is fairly similar to G29. I set steering sensitivity up 3 notches from zero in game. in profiler overall effects strength 100% - spring effect strength 100% - damper effect strength 0% - enable centre spring OFF - centre spring strength 0% - combined pedals OFF - wheel rotation 270 degrees.spring effect seems to help the wheel loosen up particularly when drifting.
