Nope you have to do it that way. Trust me I diagnosed the issue trying all sorts including setting core affinity and the only way it works is if you completely disable the CPU cores. With modern computers and SSDs it is a minor inconvenience as it takes less than 30 seconds at least for me to apply those settings and reboot.

Its been a really long time but i made a batch file using the following in notepad and saving as a .bat file
start /affinity 4 [The games location]\nfs.exe this set it to 4 cores before the game starts, tried doing this through task manager and that didnt work but ive been stable so far.
