I agree that that would be awesome, but there would be a ton of development into doing this with all of the cars. Shift and Shift 2 were made with the intention of being a driving simulator to compete with Gran Turismo. Slightly Mad Studios was the developer for only those two NFS titles and would later Kickstart Project Cars, which had a limited amount of cars that had programmed full interiors to support first person viewing due to limited resources.
