If you must, you can delete the control settings file for the game (it won't affect your progress). It's in the Need for Speed Most Wanted subfolder of the Criterion Games folder in your Documents library.

Oh, and have you tried using an emulator/plugin to get your DS3 to be percieved by Windows as an Xbox 360 gamepad? As far as I know that's the best way of getting it to work.
