You should take them out just for races (i think Rivals was like that). Seriously is really frustrating, this cars are very annoying. So take them out just while you are racing and then make them appear once you finish the race.
While I understand your frustration I think they should add more cars especially on the freeway. You are racing on the streets of a big city and a street racer at that. Use the environment to your advantage if you see a car coming up move to the left or right and try to nudge an opponent into them.
