It depends on what you enjoy in a game!
Personally I like to take my time, explore everything, unlock everything and generally do as much as I can in single player before playing multi with friends. If you're the same, my only recommendation is to force yourself to start with slow cars. A lot of very fast cars are easily accessible right from the start, but if you start with them, going back to an old Lancia or a 4wd can feel pretty slow and restrictive. If you start slow and work your way up, you'll experience a more steady sense of progression. One of the most common gripes I've heard about the game is that it lacks this sense of progression because all of the cars start off unlocked - but with enough self control, there's no reason you can't create that sense of progression for yourself.
On the complete opposite end of the spectrum, if you love social gaming or competitive multiplayer then I would suggest doing only a couple of races in single player to get familiar with the controls and handling, then jump straight into the multiplayer. Unlocked cars do not directly carry across between the two, so if multi is your flavour I recommend heading there early and not worrying too much about the single player stuff.
Most Wanted is a very open game - it lets you play it the way that you like. For some people this is a little overwhelming, but if you take it easy there's a hell of a lot of fun to be had here.

I would have to agree with the above post 100%!
I have sort of a compulsetory behaviour when it comes to game with an MP mode. i HAVE to complete the whole SP campaign before trying out the MP. I've always done this since i was a kid and it stuck. It gives yourself a good time to get to know the game, physics and most important thing in a racing game - get to know the tracks!
While you can ofc start out with MP directly, it will be a slow progression and you'll probably end up losing the most of the races and challenges. If you at least complete 50% of the SP mode you'll have a much better chance when you're heading online. Alos as rez86 said, your cars and mods will not carry over to MP as the cars there are not found by jackspots, but unlocked through your Speed Point level (I'll refer this to SPL).
SPL ranges from 1-71 and can be reset once to go "Concour" which is basiclly starting all over again and get a gold license plate. Once you go Concour, you will lose all your cars and mods for MP (SP cars and mods will always remain the same though) so you might wanna stick around a bit on the higher levels before finally starting all over again as you won't be able to enjoy the fastest car, the Koenigsegg Agera R until you hit SPL 68-70 (can't remember at what level it unlocks).
All progression in terms of license plates unlocked for completing car challenges/milestones will still remain even if you go Concour. It depends really on how quickly you're able to finish the SP campaign before going MP, but if you do complete it first and then tries out the MP mode, you'll probably start at SPL 30-ish. Speed points are earned from both MP and SP and counts up to your totalt Speed points and SPL, so even if you play in SP mode, you'll still earn Speed points that counts up and eventually rank you up in SPL.
If you're curious to when a certain car will become available for you online, get in to the start menus of the game and select Multiplayer milestones.
Oh and another thing, if you're familiar with Hot Pursuit or Burnout - the physics and rules apply here too. Drifting, driving into oncoming lanes etc will fill up your boost bar quicker. Mastering drifting is essential as if will get you around bends and tight corners much faster than if you just steer left or right. Good luck and come back if you need/want any addition advice! 🙂

I will certainly try using slower cars at first.
I own both NFS:HP and Burnout Paradise; I love Burnout. I have played the demo of this so I'm used to the physics. I love the element of drifting in all three games.
