I've completed / won this event / challenge multiple times with what should be "lower tier" cars, however each time I get back to the garage it's saying it's incomplete. This is for the challenge involving Raziel.
Is there a specific car I should be using?
Any help would be appreciated.

You have to do it in the Austin Martin. It's the only car you can do it in. If the Austin Martin is upgraded over 300, then you have to downgrade. I downgraded mine to 295 and won and the game checked it off as completed. I play on Xbox Series X. Anyone who reads this feel free to add me. My gamertag is ItsWarden46.
