You should be able to leave the club by assigning another GM.
I actually found a workaround. If the original GM makes someone else the GM and then leaves, that new GM can also leave and it will ask "are you sure you want to leave? Club will be deleted if you do." I just couldn't find any info online about this. Which is why I posted the question. I just wish it was easier for people to find this info cuz it doesn't seem very well known.
