I can't state for online play as I don't personally play it but the slower paced games are closer to realistic as it can be. The AI at least offline does seem to be better and actually work into some sort of position fairly well (does it make mistakes still yes - but at least for 25 I can see that my bad position is usually the cause of most of it.
The stamina also took a few games to get a feel for but seems to be more realistic as well, seeing most players have 45 sec shifts in real life, if you push the speed of one player it will loose it faster. This seems to work well for offline play but I can see how it can cause issues for online as that overall seems to be more arcade style of gameplay (lack of stoppages and dumps into the zone to make line changes).
I personally wouldn't want to see either the speed or stamina changed as it simulates a more realistic on ice experience.
