Back up server
Install update
Restart server to apply update
Test update
If you find errors. Roll back the update and fix the update before reapplying.

That's like if I bought a $94.59 bowl to use offline in my own time. Someone came into my home smashed the bowl and gave me a plate, and then told me "sorry, it's not that easy to fix, please continue to have soup on this plate, there's no timeline to fix it"

You don’t seem to know much about development. With proper git/code management it’s just that revert to the commit where everything worked and publish. You can even just revert changed that affect pnly offline modes. That is least you can do to make the game working offline until you sort out rest of the online issues. That is, if you properly manage the code, which seems to be not the case here…
