Because the game state and probability calculations didn't resolve the penalty logic. Might have something to do with the LT abuse you're doing.

Because the player was not in control of the puck when he was hit with a shove check. It's lame that this could be considered a puck battle, but again - these are probabilistic outcomes and sometimes the game state doesn't jive visually, so you get scenarios like this.
It's a good clip!

Obviously they know what interference is. Your clips are good and I think EA_Aljo has acknowledged you a number of times for taking the time to post these.
Regardless of the LT it should be a penalty how's this not a penalty

You're not wrong. It's a blatant hit from behind. Definitely needs a fix.

First clip I don't think should be called a penalty. There is a lot of LT going on there and that effectively makes it so you are turning your back to the hit. In the actual NHL rules hits from behind incorporate if the player put himself in a position just like you are seeing in this clip.
Second clip its interference because the puck battle has already occurred between the attacker and a different defender. Puck came loose and the second defender came in to level a hit. To me that looks like a good call.
Third clip I absolutely agree with you. Board battle, no last minute adjustments. Second defender in just rails from behind, that should have been a penalty.
