In your scenario - the defender should be simply trying to skate into the intended recipient. Doing that will ensure your players automated actions (stick lift, poke, interception) fire up if the puck is within reach. And yes, there are automated stick lifts and poke checks in addition to interceptions. You just need to leave your player in a state that allows them to trigger, and Defensive Skill Stick will mean your player is not in a state to execute these actions. (Again, not stating how it should be, just stating how it is plz have mercy)
In my opinion, they should allow DSS to be interrupted to allow said actions. This would be a massive improvement to defense.
