How do I play a friend in NHL 20

What mode are you trying to play and what console are you on? If it's Online Versus, you should be able to add someone by going to the team selection screen and hitting LB/L1 to add a friend.

Yup, Aljo is correct - Modes that allow for direct competition between friends utilize a simple add player function with lb/l1.

EASHL allows friends to play but the game will be unranked and you're forced to use seperate 2v2 teams to make it happen.

It's possible to match up with a buddy in ONES but you both need to be in the same round and have to start random matchmaking at the same time - your chances of matching up (depending on off-peak and peak hours) can still be slim

Do you need to have a paid-for EA Play account to play a friend online? I can't access the Online Versus section because it says I can't go online without an EA Play account. 

What am I missing?

You need an EA account, but you don't need a subscription to EA Play. Do you have a PS+ or Xbox Live Gold suscription? Those are required for online play.
