How Can i unlink my steam account from apex? without me having to do this via the ingame button because i cant connect into the game due to the unlimited Starting Screen bug when a steamaccount is connectet to my apex account.

Go to your browser history and look for the page that lets you link a steam account
Using a new account, or one without steam guard (not sure if either matter) sign into the steam store website
Go back to link tab and link the unused steam account to your Apex account
Launch Apex in Administrator mode (not sure if that's important, I didn't test it)
