I fixed it by resetting that assists page, ticked restore default settings and then turned down those options again but not all the way off.I’ve just tried this and it seems to have worked for me on Xbox Series X. Tried a race and releasing the throttle didn’t result in braking! It coasted as it should. Thanks for the fix, hopefully the upcoming update helps fix it for those still having the issue.

"We have found the source of the issue and have fixed it for a future update. Unfortunately, it won't be making the next patch that is planned to drop later this week, however, it will be in the one after that.
In the meantime, when playing the game for the first time, after the initial race you'll be asked to select a difficulty setting. Choosing any setting other than 'Medium' will avoid this issue from occurring. There's no way of fixing this in the settings after this point, but once that new patch is in you should stop seeing this problem."
