I have the exact same issue. Grid legends ps5. Using fanatec dd pro gt with a fanetec hand brake. With the hand brake binded the cars behave as if the clutch is in.
To get the game to work you have to unbind the hand brake. No issues with handbrake ot other games must be a grid ps5 issue.
