It depends on the hosts settings I believe if he has upgrades on then yes if it's off then its the stock version , right ?

    I don't know, I still had everything on standard for the quest, so it worked automatically.

Maybe you didn't have enough free memory for the update?
I still had over 10GB free, so I had no problems there. Maybe you just didn't have enough space?

How did you all adjust your graphics so that it still runs well?
I'm currently running 100% graphics, 60 fps and no reflections. That only seems too much when it rains, otherwise it works.
How did you set it?
