Even when I adjust the dead zone to 10 on brake and accelerate, when I go to my garage it just constantly flicks through the cars at a rapid rate. I don’t have the issue with controller though

You may want to check the deadzones in your wheel hardware's configurator (Fanatec Control Panel, Logitech G-Hub etc.) for this, as the throttle/brake deadzone are specifically for driving.

If you rest your feet on the pedals then there's a chance it's still sending a small signal to the game which it considers a button press.
