I suspect you are but just to check: are you definitely using the same golf bag as the one in which you've set your chosen ball?

I wanted to verify and I did. I am using the correct bag with the Titleist Ball. I even made sure all the bags had the Titleist ball. When playing it still shows the EA ball in the HUD.

I have the same issue in career mode. I earned the tittleist ball and just to make sure I equipped it with all my bags. Never shows up, just EA ball.
I also had this problem. It also wouldn't save my selected bag. It kept going back to the default bag as well. After several attempts, it finally saved my bag, ball and ball marker. I had to put the one selected bag, ball and ball marker in all bags to make it work. And even doing that took several tries.
Last night I tried playing wit the EA red ball and that definitely showed up on the course but the white ball in the HUD remained unchanged. It might be that this is the expected behaviour but it would be a nice visual improvement for the ball in the HUD to match if it is.
