I have had a response from EA.
They have recommended the usual things such as rebooting etc
I have informed them that this issue is something they need to sort not the players of the game.
Ditto! Un-install then re-install, turn off device, all updates done for game and device. Now I’m getting kicked out of Penny Pursuit challenge. This is beyond not being able to play the game, it’s frustrating.
The response also came with this advise

If the issue still persists, I would suggest you to install the game application on a second device, or borrow a device with the game installed from a friend. 1)Attempt to play the game on your account on a friend’s device. It is very important you ensure you are logged into your account on another machine. 2)Attempt to play the game on a friend’s account on your own device. The results of these checks should give us the information we need to pinpoint where exactly the issue is occurring and we will then be able to advise you on what steps to take next. I am/was having the same issue on a first generation iPad Air IOS 12.5.4. I moved to a iPad 6th generation IOS 14.8 - no issues, am able to play Arena mode with Power Vine without issues. There definitely appears to be an issue with the older IOS versions.
