Ok understood. So we can't create more than 1 profile at the same time?.

We used to have loads of profiles on our game. Why do they have multiple slots if we can only have one profile?

Because us old timers have been Grandfathered in and still have our multiple Profiles, we just can't create anymore or delete and replace the ones we have.
- @FantastiXxPVZ it's actually quite sad. I had multiple profiles for my kids - still had in back in April before I updated my PvZ and unwittingly deleted a couple of them. Sooo... now they can't play because they aren't allowed to touch my profile 😓
Communication about not allowing additional profiles would have been nice as I never would have deleted any profiles had I known of the future restriction...but hey, why communicate these days ?
We have the technology...sad it is not used more effectively.
Since when has EA ever given anyone advance notice on anything?
If you want another profile then check to see if they are available just after an update, profile creation is sometimes possible then.

This feature has been removed on purpose a long time ago since Battlez (now known as Arena) was introduced, but there is a glitch in the system after 7.9 update where sometimes it offers a new profile if the player name were tapped at the startup menu.

- @FantastiXxPVZ Lol, Old timers, I like that. But I hate this so much, I wanted to make a new save so I deleted all but one of my old saves because I didn’t know you can’t make more. Now, my old saves I’ve had since the start in gone.
- @Kn0ck0utt5467 I lied. My main save is gone too. The one that started it all. I’m stupid. It’s my fault it’s gone.
First screenshot your player id number associated with your missing account.
Try reinstallation through Google playstore/ apple store
and see if your account is already overwritten.
The items in the store will be different for 2 days as you will be classed as a new player but what have you got to lose.
If you have pvz2 on an old device you might be able to recover your lost profile(s).
It's worth trying the EA email registration system if you already signed up for it.
If you still have your player id number you can tap HELP at the bottom of the page and explain what happened, give them your player id number and there might be an old version of your account still in their servers.
These are all things worth trying, usually player's account has disappeared through no fault of their own.

@Kn0ck0utt5467 Just to add my 2 pence. If you power up you old iPad Mini, please turn off internet data and WiFi before you open the PVZ2 App, this way, you will have a better chance to recover your deleted profiles just in case the server tries to overwrite your old data upon linking from the initial start up.
Once you are logged in to your old profile (the one which is important to you), then enable the internet data/WiFi and force it to sync with the server, hopefully, this should send your latest data from your device back over to the server thus adding back your old profile and making it valid again.

Forget to mention that you should be able to check if the data recovering is successful, this is by opening the App on your new device to see if the profiles are back, if it did not, please do not turn off the old device and give up just yet, as there might be other ways the help center advisor can help, even in the worst case, you can still take screenshots of what you have such as plants, coins, gems, gauntlets... etc as support evident to help getting your progress manually added back over to a new account. Let's hope you do not need to resort to this method.
