This guy can stun lock you in melee, causing a lot of damage and slowing you down, so in a way he's much like the Yeti boss that will freeze you at range and then run up to you and take you out, although the Sensei is not as dangerous as the yeti is here.
I loved in GW2 that they added the Karate zombies, especially when this guy was around as his minions. Their lack in BfN again shows that too much was taken away. PvZ is all about variety, even just in appearance like the pirate zombies vs. the regular ones in GW, so them taking this away removes some of the flavor and fun.
His ranged attack isn't too bad and isn't too difficult to avoid, but it hurts. His decoys can make things interesting in GW2 as they block shots and during super waves can make things a mess in a hurry.
If GW2 had kept the awesome GW boss intros, I'd love to see what they would come with for this guy!
