It's not just PvZ, same thing happens to me in Titanfall.
Then it should be fixed but if not here is what you need to do and why it's happening.
With the latest update that Microsoft rolled out it made some changes to Game DVR and a bug appeared causing no sound. There is a simple fix however.
Hold down the power button on your Xbox One until you see the power light on the battery turn orange (approx 10 seconds)
Unplug the power cable and kinect sensor from the back of the console for 10 seconds then reconnect them
Turn the console back on using the power button (Do not use Kinect or the controller)
Once this is done you should be having no sound issues with Game DVR
I have tried these steps that you provided, (as well as the rest of the internet provided)......and my videos still don't record sound.
I just bought this system hoping that all bugs would be fixed and i am very frustrated that this is happening. This is sept of 2014, this bug should not exist.
I do not care that it didn't exist before a recent update.

Have you power cycled the console?
You might get more support checking out the official Xbox Support forums since it seems more of a console/update issue than specific game.

i have tested other games and it appears that hte issue is ISOLATED to NHL 15. of course its hte only one i want to record with. xbox support says it may be on EA's end. not surprised.
still waiting for a response. think ill wait until nhl 15 actually comes out to see if its isolated to just the DEMO which i have now
