One is on EA Servers, and shouldn't have any lag that your system or your connection doesn't introduce. The other, and it's been so long now I forget which is which, is nearly always fairly laggy, because it's on private PC systems, many of which simply aren't very good!
Garden Ops is hosted by players and is very hit-n-miss because of this.
Gardens vs Graveyards (and other MP modes) are hosted by EA, which I believe is Amazon AWS.

A few days ago, the game was running fine for me. Now, I have lag that makes multiplayer unplayable. I'm constantly jumping around, being moved back to where I was 4 seconds prior. EA, is this an issue with your servers?? Please help!

That's the problem. When I host a garden ops I'm fine but when or if I join one it either says to check my internet even though it's perfectly fine or if I get on it lags. I'm like a rubber band and get pulled back to the same spot like you. This isn't a problem with a few people, I see a lot of people having this issue

Simple: just don't play the Garden Ops when you do not host!

Everything has been fine and working well up until the last 7 days, when all hell has broken loose. The game is seriously lagging again, (had my fibre broadband updated to 50Mbps, so it's not that). I just love the way EA blames everything on peoples hardware and not their servers, couldn't be our servers, our servers are fine, it must be your hardware. I have an uber rig, with 50Mbps broadband, so of course it's my end, slap to forehead, der what a silly bunt I am.

As already suggested, and the above is the why of it, if you are not hosting, play the Gardens / Graveyards on EA's servers, and avoid the Garden Ops.
