My game reset my plants to level 1.
Has this happen to anyone else and how do I get it back to the right levels with the unlocks I had?

That's usually associated with losing connection to the EA servers. All your game stats and unlocks are stored server side. Just restart the game and it should fix itself. If not, hard restart your system.
It is a fairly common occurance, as stated above just restart your game/console and all of your stats will return.
