Garden/graveyard ops. Go to Dave's rv or Zomboss' blimp. You can play with a team or, new to GW2, you can play ops solo with up to three AI teammates. Generally speaking, ops is a fair bit easier in GW2 than in the first game.
You can also play all the multiplayer modes against AI. You could even set it up so you're the only player on one team against a full team of AI enemies.
