Perhaps try resetting nVidia CP 3D Properties (global & PvZ).

Are you using a frame limiter from a user.cfg to get 120fps locked or vsync or perhaps gsync just works (i think it just works)?  For Gsync to work I'm nearly sure VSync has to be disabled.  Doubt that would cause this issue of shadows though.   (( I do not have a Gsync monitor so I'm not familiar, I do not think you need to do anything for it to work.. I do not know how a fps cap would affect it if it would at all ))

Does reducing the graphic level / shadows have any effect?

Does Windowed Fullscreen  vs Fullscreen make a difference?

Open Notepad.
Copy and Paste this:

GameTime.MaxVariableFps 120

Save it as "user.cfg"

You cannot have user.cfg.txt
enable "View Extentions of Known File Types" from Folder Options in Control Panel

Put it in your PvZ directory
\\Origin Games\Plants vs Zombies Garden Warfare
