uPnP is likely to work for a console in a home.
Else manually port forwarding you'll like want to make a DHCP Reservation for your PS3's MAC.
You could test using DMZ setting on your router.. if that works it surely is a port forwarding issue.
Check NAT type on PS3, should be either NAT1 or NAT2
