You can try changing it in this file:

C:\Users\<USER>\Documents\PVZ Garden Warfare\settings\PROF_SAVE_profile

Edit with Notepad

GstRender.FullscreenWidth 1920

GstRender.FullscreenHeight 1080

If it's windowed those have different settings.  Called WindowedHeight and Width

Try changing them to 800x600

see if it works.
